Hans Peter-Schmidt took over the production of these vineyards in Valais, Switzerland in 2004 and began converting the land to organics. The project is all about biodiversity, and all the vineyards are beautifully overgrown and lush. Zero sulphur is used.

Whole bunches of grapes, still on the stem, spend 9 months in airtight steel tanks (a kind of carbonic maceration). The grapes are then pressed and poured into old oak barriques for 2 ½ to 3 years of ageing.

Spicy and herbal with honey and quince, this is a wine with great balance and a lot of energy. Slightly quieter than Finito but with more depth and greater ageing potential.
